Applesauce Spice Cupcakes

Last night I baked the first batch of cupcakes for the weekend BBQ.
While I won't give away the decorating ideas just yet (expect that on Friday night or Saturday morning) I will give you the recipe for the first batch.
Applesauce Spice Cupcakes


  1. Preheat oven to 350 degrees. Line a muffin tin with muffin cups or grease well.
  2. In a bowl, beat 3/4 cup butter with 1 1/2 cups packed brown sugar until light and fluffy. Beat in 3 eggs, one at a time and then beat in 1 tsp vanilla.
  3. In another bowl, mix together 3 cups flour, 2 1/4 tsp baking powder, 1 tsp salt, 3/4 tsp baking soda, 3/4 cup tsp cinnamon, 1/2 tsp ground ginger, 1/4 tsp nutmeg, and 1/4 tsp allspice.
  4. Stir the dry mix into the butter-sugar mix in 3 batches, alternating with 1 1/2 cups applesauce and 1/3 cup buttermilk.
  5. Bake for about 35 minutes or until a toothpick inserted into the center comes out clean. Let cool.

Hey so in other news, John and I are growing potato trees:


We can't bring ourselves to eat them.
Sick curiosity wants us to see just how high these growths will grow.
I think Pochohontas said it best, "how high will the sycamore grow, if you cut it down then you'll never know..."
